Classic French Onion Soup

There’s something deeply comforting about a bowl of French onion soup—the rich aroma of slow-caramelized onions, the savory depth of broth, and that irresistible layer of melted cheese over toasted bread. This timeless dish is simple at heart, but patience is what transforms it into something extraordinary.

Ingredients (Serves 4–6)

  • 4 large yellow onions, thinly sliced

  • 3 tablespoons unsalted butter

  • 1 tablespoon olive oil

  • 1 teaspoon sugar (optional, helps caramelization)

  • 3 cloves garlic, minced

  • 1/2 cup dry white wine (or substitute with extra broth)

  • 6 cups beef broth (or a mix of beef and chicken broth)

  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried)

  • 1 bay leaf

  • Salt and black pepper, to taste

  • 1 baguette, sliced

  • 1 1/2 cups grated Gruyère cheese (or Swiss cheese)

Instructions

1. Caramelize the onionsIn a large pot or Dutch oven, melt the butter with olive oil over medium heat. Add the sliced onions and stir to coat. Cook slowly, stirring occasionally, for 30–40 minutes until the onions become deeply golden and caramelized. Lower the heat if they begin to burn. Sprinkle in the sugar halfway through if desired.

2. Build the flavorAdd the minced garlic and cook for another minute until fragrant. Pour in the white wine to deglaze the pot, scraping up any browned bits from the bottom. Let it simmer until reduced by about half.

3. Simmer the soupAdd the broth, thyme, bay leaf, salt, and pepper. Bring to a gentle simmer and cook uncovered for 20–30 minutes to let the flavors meld. Remove the bay leaf before serving.

4. Prepare the breadWhile the soup simmers, toast the baguette slices in the oven at 375°F (190°C) until golden and crisp.

5. Assemble and broilLadle the soup into oven-safe bowls. Place a toasted baguette slice on top of each, then generously sprinkle with grated cheese. Broil for 2–4 minutes until the cheese is melted, bubbly, and lightly browned.

Tips for the Best French Onion Soup

  • Take your time with the onions—this step builds the soul of the dish.

  • Use high-quality broth for the richest flavor.

  • Gruyère is traditional, but feel free to mix cheeses for your own twist.

  • If you don’t have oven-safe bowls, melt the cheese on the bread separately and place it on top when serving.

Final Thoughts

French onion soup is proof that humble ingredients can create something truly special. Whether you’re serving it as a starter or the main event, this cozy classic brings warmth and depth to any table.
